Inspired by the legendary dessert wines of Sauternes, the Silenus Late Harvest Sauvignon Blanc is sourced from the Meeker Vineyard in the Big Valley AVA of Lake County. The location of the vineyard allows the Sauvignon Blanc grapes to ripen slowly and preserve acidity and intensifying flavors. The wine is neutral barrel fermented and aged for 7 months prior to bottling.

Tasting Notes:

The bright pale-yellow color is deceiving as this wine reveals intense aromas of cotton candy, rainier cherries and hints of caramelized ginger. On the entry, the wine leaps from the glass with white peach, dried flowers and a touch of spice. Beautifully perfumed and light on its feet, the wine is classy, refreshing and impossible to resist. It pairs beautifully with savory foods, especially tart blue cheeses, foie gras, seafood and spicy, fragrant Asian dishes. It also pairs well with desserts like cheesecake, lemon tarts and parfaits.

 

The wine is best enjoyed slightly chilled removing from the refrigerator 10-15 minutes before opening. Drink now but aging will result in complex sweetness and intense flavor. The wine can easily age 25 years and beyond.
